Ingredients

6 slices bacon, chopped

1 small onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 (16 oz) package potato gnocchi

2 cups shredded cheddar cheese

1 cup shredded carrots (optional)

2 cups baby spinach
-
1 tsp thyme
-
1/2 tsp paprika

Salt & pepper, to taste

Green onions, chopped (for garnish)
Instructions

In a large pot, cook bacon until crispy. Remove and set aside, leaving a little grease.

SautΓ© onion and garlic in the bacon drippings until softened.

Pour in chicken broth and heavy cream, then bring to a gentle simmer.

Stir in gnocchi and cook 3β4 minutes, until they float to the top.

Add cheddar cheese, carrots, spinach, thyme, paprika, salt & pepper. Stir until cheese is melted and soup is creamy.

Return bacon to the pot and simmer for another 2β3 minutes.

Garnish with green onions and extra cheddar before serving hot.
