Bacon Cheddar Gnocchi Soup Recipe – The Ultimate Comfort Food

Ingredients

  • 6 slices bacon, chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 (16 oz) package potato gnocchi

  • 2 cups shredded cheddar cheese

  • 1 cup shredded carrots (optional)

  • 2 cups baby spinach

  • 1 tsp thyme

  • 1/2 tsp paprika

  • Salt & pepper, to taste

  • Green onions, chopped (for garnish)


Instructions

  • In a large pot, cook bacon until crispy. Remove and set aside, leaving a little grease.

  • SautΓ© onion and garlic in the bacon drippings until softened.

  • Pour in chicken broth and heavy cream, then bring to a gentle simmer.

  • Stir in gnocchi and cook 3–4 minutes, until they float to the top.

  • Add cheddar cheese, carrots, spinach, thyme, paprika, salt & pepper. Stir until cheese is melted and soup is creamy.

  • Return bacon to the pot and simmer for another 2–3 minutes.

 

  • Garnish with green onions and extra cheddar before serving hot.
