Cheesy Sausage Tortellini Soup Recipe – A Comforting Bowl of Creamy Goodness

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 tsp Italian seasoning

  • 1/2 tsp red pepper flakes (optional)

  • Salt & pepper, to taste

  • 1 (9 oz) package refrigerated cheese tortellini

  • 2 cups fresh spinach (or kale)

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese


Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, crumbling it as it cooks.

  • Stir in onion and garlic, cooking until fragrant and softened.

  • Add diced tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.

  • Stir in heavy cream, then add tortellini. Cook for 5–7 minutes until pasta is tender.

  • Add spinach and cook until wilted.

  • Stir in mozzarella and Parmesan until melted and creamy.

 

  • Serve hot with crusty bread and enjoy that cheesy comfort!
