1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

4 cups chicken broth

1 cup heavy cream

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt & pepper, to taste

1 (9 oz) package refrigerated cheese tortellini

2 cups fresh spinach (or kale)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese
Instructions

Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, crumbling it as it cooks.

Stir in onion and garlic, cooking until fragrant and softened.

Add diced tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.

Stir in heavy cream, then add tortellini. Cook for 5–7 minutes until pasta is tender.

Add spinach and cook until wilted.

Stir in mozzarella and Parmesan until melted and creamy.
