Cozy Italian Sausage and Potato Soup Recipe

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 4 large russet potatoes, peeled & diced

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, diced

  • 4 cups chicken broth

  • 2 cups water

  • 1 cup heavy cream (or half & half)

  • 2 cups chopped fresh spinach (or kale)

  • 1 tsp Italian seasoning

  • 1/2 tsp red pepper flakes (optional)

  • Salt & black pepper, to taste

  • 2 tbsp olive oil


Instructions

  • Heat olive oil in a large pot over medium heat. Cook sausage until browned, breaking it into crumbles. Remove and set aside.

  • In the same pot, sauté onion, garlic, carrots, and celery until softened.

  • Add diced potatoes, chicken broth, water, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 15–20 minutes until potatoes are tender.

  • Stir in cooked sausage and heavy cream. Simmer another 5 minutes.

  • Add spinach (or kale) and cook just until wilted.

  • Taste and adjust seasoning as needed.

 

  • Serve hot with crusty bread for the perfect cozy meal!Â
