Ingredients

1 lb Italian sausage (mild or spicy)

4 large russet potatoes, peeled & diced

1 small onion, chopped

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, diced

4 cups chicken broth

2 cups water

1 cup heavy cream (or half & half)

2 cups chopped fresh spinach (or kale)

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt & black pepper, to taste

2 tbsp olive oil
Instructions

Heat olive oil in a large pot over medium heat. Cook sausage until browned, breaking it into crumbles. Remove and set aside.

In the same pot, sauté onion, garlic, carrots, and celery until softened.

Add diced potatoes, chicken broth, water, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 15–20 minutes until potatoes are tender.

Stir in cooked sausage and heavy cream. Simmer another 5 minutes.

Add spinach (or kale) and cook just until wilted.

Taste and adjust seasoning as needed.
