2 large sweet potatoes, sliced into rounds

1 tbsp olive oil

Salt & pepper, to taste

1/4 cup red onion, thinly sliced

1/4 cup crumbled feta or goat cheese

2 tbsp chopped fresh parsley

1 tbsp balsamic glaze (optional)
Instructions

Toss sweet potato slices with olive oil, salt, and pepper.

Grill over medium heat 3–4 mins per side, until tender with grill marks.

Arrange grilled slices on a platter.

Top with onion, cheese, parsley, and a drizzle of balsamic glaze.
