Prep the ingredients: Chop the onions and garlic, peel and dice the sweet potatoes and carrots, and cube the beef.
Sauté the onions and garlic in a skillet over medium heat for 5-7 minutes until softened.
Add the sautéed onions and garlic to the crockpot along with the beef, sweet potatoes, carrots, and diced tomatoes.
Pour in the beef broth, and add thyme, smoked paprika, salt, and pepper.
Cover and cook on low for 8-10 hours or on high for 4-6 hours.
Check for seasoning and adjust with additional salt and pepper as needed before serving.
