Ingredients

  • 2 lbs beef chuck cubed
  • 2 medium sweet potatoes peeled and diced
  • 1 large onion chopped
  • 3 carrots sliced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 can 14.5 oz diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  • Prep the ingredients: Chop the onions and garlic, peel and dice the sweet potatoes and carrots, and cube the beef.
  • Sauté the onions and garlic in a skillet over medium heat for 5-7 minutes until softened.
  • Add the sautéed onions and garlic to the crockpot along with the beef, sweet potatoes, carrots, and diced tomatoes.
  • Pour in the beef broth, and add thyme, smoked paprika, salt, and pepper.
  • Cover and cook on low for 8-10 hours or on high for 4-6 hours.
  • Check for seasoning and adjust with additional salt and pepper as needed before serving.
