Ingredients

  • 1 pound ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 cup corn frozen or fresh
  • 3 cups tortilla chips crumbled
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped (for garnish)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned, about 6-8 minutes. Drain excess fat.
  • Add the chopped onion, garlic, and bell pepper to the skillet. Cook until softened, about 5 minutes.
  • Stir in the black beans, diced tomatoes, corn, chili powder, cumin, and salt. Simmer for 10 minutes.
  • In a greased 9x13 inch baking dish, layer half of the crumbled tortilla chips, followed by half of the beef mixture, and a third of the cheese.
  • Repeat the layering with remaining tortilla chips and beef mixture. Top with the rest of the cheese.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
  • Let the casserole cool for 10 minutes before serving. Garnish with fresh cilantro before enjoying.
