Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 cup corn kernels frozen or fresh
  • 1 cup diced red bell pepper
  • 1 cup diced onion
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons fresh cilantro chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • Prepare the slow cooker by adding chicken thighs.
  • Add the corn, bell pepper, onion, and garlic on top of the chicken.
  • Sprinkle the chili powder and smoked paprika evenly over the ingredients.
  • Drizzle the mayonnaise over the mixture and season with salt and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken inside the cooker with two forks.
  • Add the crumbled cotija cheese, chopped cilantro, and lime juice, stirring gently.
