Ingredients

  • 8 oz pasta e.g., rotini or fusilli
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 1 avocado diced
  • ½ cup cilantro chopped
  • ½ cup ranch dressing
  • 2 tbsp lime juice

Instructions

  • Cook the pasta according to the package instructions.
  • Prepare the vegetables while the pasta cooks.
  • In a large mixing bowl, combine the cooled pasta, black beans, corn, bell peppers, cherry tomatoes, red onion, and avocado.
  • Add cilantro, ranch dressing, and lime juice to the bowl.
