Ingredients

  • 4 large russet potatoes
  • 2 cups chili any variety
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash the potatoes thoroughly and dry them.
  • Poke holes in each potato with a fork.
  • Rub the potatoes with olive oil and sprinkle with salt.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  • Once cooked, carefully remove the potatoes from the oven and let them cool slightly.
  • Cut a slit in the top of each potato and gently squeeze the sides to open.
  • Fill each potato with a generous scoop of chili, then top with cheese.
