Preheat the oven to 400°F (200°C).
Wash the potatoes thoroughly and dry them.
Poke holes in each potato with a fork.
Rub the potatoes with olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
Once cooked, carefully remove the potatoes from the oven and let them cool slightly.
Cut a slit in the top of each potato and gently squeeze the sides to open.
Fill each potato with a generous scoop of chili, then top with cheese.
Return the stuffed potatoes to the oven for 5-10 minutes until the cheese is melted.
Remove from the oven, and top with sour cream and green onions before serving.
